The 2007 Vintage of Pinot Noir has proved to be quite an excellent vintage. The aromas of this Barrel Select are earthy, spicy and smokey. With a soft mouth feel, and well rounded tannins in mid palate, followed by, wild berries, cranberry and light spices and a lengthy smooth finish. Of interrest, the fruit was destemmed and cold soaked before primary fermentation was induced using several yeast strains, all done in small, opened top fermentators. The wine was then aged in 60 gallon French Oak barrels for twenty one months.
